Most people are familiar with formaela cheese. However, opsimotiri cheese is now one of the local dairy products that can be found in shops selling traditional products as well as in some taverns.
It is also known as psomotiri, a product trademark in all of Viotia. It is a type of local cheese prepared from sheep's milk and yogurt, mixed with salt and then left for three days to ferment. Try it with bread and a dash of oil and the local raki of Arachova. It is one of the tastiest local delicacies.
