Tsipouro (raki) production has a history of almost 160 years using practically the same process. Its production is a favorite pastime for the people of Arachova and it is made late November to early December.
It is a time when friends and families get together round the cauldron (also known as rakaria) awaiting the aroma of the distilling grapes. Both the production and the consumption of the particular tsipouro occurs at amateur and more professional levels respectively, so if you want to sample this coveted spirit you only have to go to the taverns and cafes in Arachova.
Preferably select the Vasilias (King) variety, which stands out for the quality of the grapes and its careful extraction process in the modern facilities in the distillery located in Zemeno, within walking distance of Arachova.
