Love for the pure Cretan diet model determines the philosophy of the kitchen, where the Cretan extra virgin olive oil, the fresh vegetables from the organic garden, the greens and herbs gathered by hand, the selected meat from the Cretan farms, the handmade bread and other Greek gastronomic treasures are creatively combined by the award-winning chef Giannis Tsivourakis.
The chef suggests a platter of selected Greek cold cuts and buffalo kavourmas from Kerkini with poached egg and chilli pepper chutney, and the tuna tartare with avocado and sea salad from the appetizers. For the main course, the chef picks out the following: ravioli stuffed with vegetables (briam), dark vegetable broth and mature Cretan kefalotiri cheese (a dish entirely organic), and the John Dory fillet with mashed celeriac and gremolata shrimp.
