It has been in business since 1924 and today the fourth generation of owners hold the reins. Iordanis' full flavoured recipe for its famous bougatsa originated in Constantinople. However, the secret behind its success is not only in the bougatsa, but also in the cheese used as it is made from Chania (PDO) pihtogalo (mizithra) which is not found anywhere else in Greece. Also, oil is used in the pastry as opposed to butter, while the sweet bougatsa is sprinkled with sugar!
