One of the most delicious Corfu dishes, bourdeto, is traditionally made with haddock or cod (or any other similar fish).
Ingredients for 4 people
2 large or 4 medium sized haddock pieces
1 cloves of garlic
1 large red onion or 2 medium sized white and red
1 tea spoon of sweet paprika
1 tea spoon of spicy paprika
3/4 cup of olive oil
half a lemon
Heat the oil to medium temperature. Add the chopped garlic cut into 3 and add the chopped onion. When the onions begin to brown, remove the garlic. Add the sweet and spicy paprika and stir. When the mixture is smooth, place the fish and add water until level with the fish. Bring to the boil and stir. Before the fish softens too much, remove from heat and add lemon.
