Fish bianco is one the easiest recipes in Corfu cuisine and is prepared mainly with white fish (haddock, mullet, grouper etc).
1 kg fish fillets
4-5 cloves of garlic
half a cup of oil
juice of 2 lemons
Saute the potatoes in oil, adding the garlic, oregano, rosemary, salt and pepper. Pour enough hot water to cover the potatoes and add the fish. Allow to boil until you are left with a little juice and remove the juice. Leave for a while to thicken and serve with white wine.
