Pastitsada is another famous Corfu dish which is made from meat or fish with macaroni.

1 chicken or rooster
500 gr of macaroni
2 onions
1 tea cup wine (Mavrodaphne)
500 gr tomato paste
1 stick of cinnamon and cinnamon powder
5 cloves
5 grains of spice berries
5 grains of pepper
1.5 tea cup olive oil
kefalotiri cheese for garnish

Cut the chicken into pieces and saute in a deep pan with about a cup of olive oil, add the chopped onions and cook until brown and then add dessert wine. Add tomato paste, salt, pepper, sugar and other spices to the pan. The secret to the delicious pastitsada is cinnamon. After adding the cinnamon, stir gently. Turn down the heat and allow the food to cook. If you see that the chicken has absorbed all the wine, add more. The slower it is cooked, the juicier and more tender it becomes. In another pan, boil the pasta in salted water. Once ready, drain and pour a dash of olive oil to avoid sticking. Serve the macaroni on a large platter, top with meat in red sauce and sprinkle with grated cheese.
