Sofrito is one of the most famous local dishes made from beef, plenty of garlic and parsley.

Ingredients for 4 people
4 slices of rump beef
8 cloves of finely chopped garlic
1 cup of finely chopped parsley
2 cups of flour
1 cup of white wine vinegar
1 cup of olive oil

Heat the olive oil in a large frying pan. Season the meat well with salt and pepper and roll it in flour before placing it onto a flat dish. Shake the beef slices to remove excess flour and fry over medium heat for a total of 10-12 minutes on both sides. Remove from heat and place on a platter. In the same oil, add the parsley and garlic and saute for 2-3 minutes. Put the meat back in the pan with the vinegar to moisten it and increase the heat for 2-3 minutes until the vinegar has evaporated. Cover the pan and simmer for 20-25 minutes until the meat is tender and the sauce has thickened.
