Apaki Salad

Apaki is a cold meat from lean pork which is marinated in vinegar for 2-3 days before being smoked in aromatic leaves and covered in herbs and spices.

Ingredients
1 bunch of stamnagathi
1 bunch of radishes
3 spring onions, chopped
apaki (as much as you like)
parmesan
1 cup of olive oil
oregano
balsamic vinegar
salt
Instructions
Put the apaki onto grease proof paper and heat in the oven for 10 minutes. Once warm, cut into small cubes and place in a bowl. Wash the greens, cut and add to the apaki. Add vinegar, oil, salt, oregano and Parmesan.
