Gamopilafo is a traditional food is served mainly at weddings, engagements and christenings and is a good choice for a festive table.
2 kilos of goat
1 small free range rooster halved
1 bay leaf
a little thyme
the juice of 1.5 lemons
200-300 grams of butter curd
Put the all the meat, onion, carrots and bay leaf to simmer for 3-4 hours (check regularly and add water if necessary). When ready, place on a platter and remove the carrots and onion and keep the broth for the gamopilafo. Strain the broth (if fatty, dilute with water) and boil with rice over a high heat for 5-8 minutes, adding salt and lemon juice. Three cups of meat broth are needed for one cup of rice. When ready, mix in the butter curd (you may heat the curd before hand) with rice and add the thyme. Allow to stand for 3 minutes. Serve the rice and a little meat in a shallow dish.
