Kaltsounia Kritika

Kaltsounia (turnovers), also known as Lihnarakia, are a treat for the Cretans and are made with various fillings.

For the filling
1/2 kilo of mizithra
1/2 kilo of anthotiro
4 eggs
1 dessert spoon of mint

1 cup of milk

Put the cheese, mint and 3 eggs in a bowl. Knead the flour with the milk and oil, adding water as needed to make a suitable dough. Roll the dough onto a floured surface and cut into circles. Add a spoonful of filling onto the dough and close dough with a folk. Place the turnovers onto a greased baking tray, brush with egg (diluted with a little milk) or sprinkle with sesame seeds, Bake in the oven at 200°C until golden brown.
