Snails Boumbouristi

Snails are known as hohli on Crete. Below is a simple recipe to enjoy snails only as the Cretans know how to.

Ingredients
1 kilo of snails
salt
rosemary
1 glass of vinegar
1 cup of oil

Instructions
Clean the snails from the front (do not wash or boil them). Add salt to the frying pan and place the snails front side down and leave or 2 minutes until lightly salted. Add the olive oil and rosemary and leave for another 5 minutes. Add vinegar and stir the snails. Serve warm.
