One of the most delicious dishes of the cuisine of Kefalonia is the fish bourgeto, cooked in the oven with garlic and tomato.


1 kilo maridaki or smelt

2 cloves of garlic chopped

3 fresh tomatoes chopped

1 tablespoon tomato paste

150 ml olive oil

3 tablespoons parsley chopped

salt, oregano


Wash and clean the fish well, add salt, put into a wide colander and leave them in the fridge with a plate underneath to catch the liquid draw out by the salt. Spread the tomatoes, garlic, parsley and olive oil along with the tomato paste at the bottom of a baking tray and place the fish on top, mix and spread out again. Add the oregano, without crumbling. Place in a preheated oven at 180° c for 20-30 minutes, depending on the size of the fish.
