You cannot leave the island without tasting - or taking with you as a souvenir - this famous and beloved local delicacy with its red colour. Mandolas are manufactured from sugar, almonds and food colour. Their name comes from the Italian, mandorla, meaning almond.

According to tradition, when Kefalonian housewives had guests, they lit an incense burner and threw in almonds with a little sugar. Today, you will find them in different variations of colour and flavour, with caramelised, roasted almonds always forming the base.
