Tsigaridia

Tsigaridia, i.e. greens stewed with herbs, is another famous dish of the local cuisine, which Kefalonians cook with slight variations of the ingredients.

Ingredients

2.5 kg greens (leeks, poppy, hartwort, sowthistle, sorrel, spinach, chard)

1 bunch of celery

1 bunch parsley

marjoram

fennel

3-4 green onions

2 onions

half a head of garlic

2 tomatoes, diced

150 gr. glutinous rice

1 cup oil

salt, pepper

Method:

After thoroughly washing and cutting all the greens and herbs, blanch in hot water for 5-6 minutes. Fry in oil with the onions and garlic. Add the greens, tomato and herbs. Boil for 5 minutes and add the rice, and as much water as you need, in order to boil.
