Halvas Koutaliou

The Kotian Halva Koutaliou (halva by the spoonful) is a quick and light dessert, which you can prepare easily, with very simple materials.


For the syrup
4 cups water
3 cups sugar
1/2 cup lemon

For the halva
1 cup olive oil
2 cups whole wheat flour

Prepare the syrup, combining the water, sugar and lemon. In a deep pot, heat the oil. Pour the flour in the oil and stir constantly with a long wooden spoon until golden (take care not to burn or allow it to stick to the pot). With the syrup next to you, carefully pour it into the pot, little by little, until the syrup has been absorbed by the mixture. Remove it from the heat, cover it with a towel and leave it for a while to tighten. Scoop out spoonfuls with a large spoon and shape them by hand. Sprinkle with cinnamon.
