Kanelada is usually drunk like a soft drink beverage and is particularly renowned in the mountain village of Zia.

1,5 kg water
750 gr. sugar
8 cinnamon sticks


Place all ingredients in a saucepan and boil for about 30 minutes, checking it throughout the process. Remove the foam that floats to the top. After half an hour when you see that the mixture begins to rise it means that the ingredients have bonded, which is the aim. Remove from the heat and while it's still hot, strain it, because the cold will thicken and make it harder to strain juices. Allow to cool completely, until a fairly thick syrup has formed. Put it in a bottle, preferably glass, and store it inside or outside the refrigerator.
