Lampropites owe their name to the fact that the recipe is usually prepared during Easter (also referred to as 'Lambri') by the women of Kos.

1 kg all purpose flour
3 individual sized yogurts
3 medium sized packets butter
3 eggs

1 sachet baking powder
1 teaspoon salt
1 kg anthotiro (ricotta) or sour myzithra
1/2 kg feta
3-4 eggs
pepper and nutmeg
1 egg for egg wash

Place the yogurt, melted butter, salt and eggs in a bowl and mix. Slowly add the flour and baking powder and mix until a soft dough is formed. Roll out mold sized pieces of dough with a thickness of 1 cm. Grease the molds and lay the sheet in each mold ensuring even thickness. Add the cheese into your filling and press it with a fork to mix it in well with the other ingredients. Fill each mold with your mixture. At the end brush with egg and sprinkle with pepper and cinnamon and bake in a moderate oven until golden brown.
