Varvara is a traditional sweet from the island of Kos, which is usually prepared for the celebration of Agia Varvara.

1/2 kilo of whole wheat
1 cup of raisins

1/2 kilo of sesame seeds (or tahini)
5-6 chickpeas (optional)
5-6 black-eyed beans (optional)
1/2 kg sugar

Half Boil the wheat in a pot or pressure cooker and add the chickpeas, raisins and black-eyed beans. Boil again (in the pressure cooker if you like) to cook the mixture well. Bake the sesame in the oven for a little and then grind it. Remove from the pot from the heat and then pour in the sesame. You can use tahini diluted with a little water instead of sesame. Put it back on the fire and bring to a boil. Serve on plates and add sugar, depending how sweet you want it, then add a few pomegranate seeds and cinnamon.
