Eliopita (Olive bread)

The traditional eliopita, also known as liopita, is ideal with sfela and is a tasty delicacy (meze) with tsipouro or ouzo.

1 cup extra virgin oil
1 cup black olives
4 cups flour
2 cups warm water
1 small onion
1 tbls dry mint
1 tsp baking powder

Remove the pips from the olives and finely chop them. Add the finely chopped onion and mint to the olives and leave aside. In another bowl mix together the flour, water and baking powder, add the oil and then the olive mixture. Using your hands mix together until you have a uniform dough. Grease a baking tray with oil, spread the dough and bake the eliopita at 180°C for 50 minutes.
