Also known as galopita, Messinian galatopita is a traditional sweet pie that is made on Easter Sunday or Monday.
1 ½ liter fresh milk
1 cup fine semolina
2 tbls fresh butter or one small coffee cup olive oil
a little olive oil to grease the baking tray
1 cup sugar
2 vanilla powders
Heat the milk in a pot. When warm add the semolina and stir well. Add the butter and once the mixture thickens add the sugar and vanillas.
Take of the heat. Once the mixture cools down, add the 5 eggs, which you have beaten well beforehand. Then, grease a medium-sized baking tray, sprinkle with flour and empty the contents of the pot.
Finally, bake in a preheated oven at 180 degrees for 50-60 minutes. If it starts to burn, cover with foil.
