The lalaggia are the main festive sweet that is prepared and offered during the Christmas period in Messinia.
For 6-8 persons
1 kilo flour
180 grams olive oil
1 tsp salt
1 tsp cinnamon
1 tsp ground cloves
4 tbls sesame seeds
1 sachet dry yeast or 100 grams leaven from the bakery
650- 750 grams warm water (approx. 2- 3 cups)
Sunflower oil for frying
Place the flour and the oil in a bowl and mix together until the flour has been uniformly moistened.
Add the remaining ingredients, mix them well and add the warm water. Cover the dough for about 1 hour until doubles in size. If you have used leaven the dough will take longer to rise.
Finally, roll the dough into long, thin cord-like shape and after folding them four, drop them into hot oil until they turn golden. Place them in a colander to strain the oil, they can be stored for a number of days. They are perfect with cheese and honey.
