A tasty and classic recipe, which can be made with, or without tomato. Mani-style Fried Trachanas is scrumptious.
1 glass of sour trachanas
1 onion, finely chopped
2/3 glass tomato, finely chopped
1/2 wine glass oil
Heat the oil in a frying pan and add the trachana. Fry it until it turns golden and add some of the finely-chopped onion. Stir the mixture 2-3 times and carefully add warm water and fresh tomato, which you have either finely chopped or passed through a food processor. Continue stirring and add water as it absorbs it quickly.
Once the trachanas has softened, it takes about ten to fifteen minutes, add parsley, salt, pepper and take off the heat. Cover the pot having left some liquid, so that the trachanas can double. At least half an hour needs to go by before serving the dish. The trachanas needs to be thick and be eaten with a fork.
