Mani-style traditional salad

Rich is aromas and vitamins this Mani-style traditional salad is colorful and really tasty. You can even prepare this a main meal rather than a side dish.

Ingredients
4 medium-sized round potatoes cut into small pieces
3 oranges cut into small pieces
2 small onions, finely chopped
7 Mani-type black olives
12 Mani-type small green olives with savory
½ cup of the Mani-type extra virgin olive oil
2 tbls red aromatic Messinia vinegar, exceptional quality
1 tsp oregano from Mt. Taygetos
Salt (from natural salt marshes of Trachila)
Freshly-ground pepper

Directions
Boil the potatoes in salted water for 10-15 minutes. Strain them and allow them to cool down. Prepare the orange pieces, onions and olives. Mix the vinegar, salt, pepper and oil well and pour the mixture over the salad. Sprinkle the aromatic oregano from Mt. Taygetos and the freshly cut onion (if there is any). Using two forks mix well and serve the salad with freshly-baked Mani-type bread.
