Olives constitute one of the most traditional, local products of Messinia. It may sound strange, but the olive spoon sweet has a particular flavor and aroma.
1 kilo Kalamata olives (net weight) pitted and desalted
700 gr. sugar
100 gr. glucose
Rind of 1 lemon
4 crushed coriander seeds
Place the olives in a wide pot with a thick bottom and sprinkle with flavorings. Cover with sugar, place the lid and leave for 24 hours. Boil over a medium heat adding a little water, if needed, until the sugar is dissolved. Take off the heat and add the glucose. Allow to cool and replace the pot over heat until the syrup thickens.
