Sfela, or the "cheese of fire" is the name given to the traditional cheese of Messinia, which has been certified as a Protected Designation of Origin product.

It is a whitish-yellow, semi-hard cheese that is made from sheep and goat's milk and cures in brine until it reaches its characteristic color. It has a full 'body' with small holes. Try it as a starter, on the BBQ or add it to some meat, vegetable or pasta recipes.
