Kalogiros (or Kalogeros, meaning 'monk') of Naxos is a wonderful recipe that combines beef, eggplant and cheeses and is ideal for a Sunday table.


2 large eggplants, cut down the middle and debittered
4 slices of beef fillet pre-braised in red sauce
4 slices of feta cheese or sour myzithra cheese
4 slices of very ripe tomato
4 slices of yellow cheese, preferably graviera cheese
A little cinnamon


Scrape the cut sides of the eggplant halves and fry them until golden brown. Place them in a baking tray with the cut side facing up. Put half a slice beef on each eggplant with some of its sauce, a slice of feta or sour myzithra cheese, a slice of tomato, a slice of yellow cheese and sprinkle with a little cinnamon. Bake in preheated oven at 200 degrees until cheese melts. Serve with mashed potatoes or rice.
