On the top floor of the Elysium Resort & Spa main building in Kallithea, Noble gourmet a la carte restaurant offers a unique gastronomic experience focusing on the Rhodian cuisine and pleasing all the senses. In 2018, Noble was awarded with a Toque d’Or, being one of the 25 most prominent restaurants in Greece, and won a Greek Cuisine award.
The restaurant’s head chef Stamatis Misomikes (IGCAT European Young Chef 2016) and executive chef George Troumouchis bring back to center stage the island’s culinary tradition seen through a modern gastronomic view.
The menu, which is based on a lengthy research in the island’s villages, is designed to preserve the authentic flavours and the uniqueness of Rhodian and Aegean products, with each dish narrating the story of a forgotten daily life in order to trigger emotions and awaken memories.
Some of the dishes that you should definitely sample in Noble are the giapraki with pinna mollusk in five flavours (sour, sweet, savoury, bitter, umami), the cuttlefish rice with synoro (soft cheese like mizithra) and scrag, the “Salas” salad with “cherepedi” beverage (as special beverage made from 19 herbs with a history dating back almost two centuries), the “petsia with lopia” (a unique dish/sausage that you can find only in a few villages of the island) and the rabbit stew with “koukoumaria” (a kind of morchella mushroom grown in the forests of Rhodes).
