Split Peas

The split peas of Santorini is definitely one of the first flavours that you'll be recommended to try on the island. Its taste, aroma and texture are unique and unmistakeable beacause of the soil.

It comes from the variety Lathyrus clymenum, which is completely different from other types of split peas found in other parts of Greece. Make sure you sample split peas in different variations in the island's restaurants (usually puree with onions).
