Caper salad, a healthy, traditional recipe, is the perfect accompaniment for your ouzo. Those of you who love caper will adore its unique flavour.
1 cup capers (dry)
1 kg brown sliced onions
1 cup olive oil
1/3 cup white vinegar
1 wine glass of red wine (optional)
2 bay leaves
Leave the capers 2 days in a bowl of water, changing the water 3 times a day to get the bitterness out. After this process, you will notice that due to the water, the volume of caper has doubled in size (filling 2 cups). Boil the capers for 5 minutes in water and drain. Repeat 2 more times so that the capers are less bitter. Then, heat oil in a saucepan and add the onions to brown. Add the capers, the vinegar, the bay leaves, salt and pepper. Leave the caper salad to boil and add water as needed (plenty of water is needed as it takes approximately 2 hours for the capers to soften, particularly if they are dried for many years).
