Chickpea croquettes

One of the most famous appetizers of the island, chickpea croquettes are crunchy and delicious and are not missing from the table of those who come visiting Sifnos. In fact, they are tastier after one day.

250 gr. chickpeas
1 big potato
1 small bunch of mint
1 small bunch of parsley
2 brown onions
1 teaspoon marjoram
Flour for frying
Freshly ground pepper
Frying oil

Leave the chickpeas to soak for 6-8 hours in warm water, in which you will have dissolved the cooking soda. Boil the potato until it is soft. Rinse chickpeas and roughly cut them in multi cutter or vegetable mill. Mash the potatoes, finely chop the onions and herbs. Pour the ingredients in the chickpeas, add the marjoram, salt, pepper and knead until you get a relatively tight mix. Make medium-sized round balls and sprinkle with flour. Put the olive oil to burn and prefer frying in a deep frying pan or fryer. Fry the meatballs until they get a golden brown colour.
