Mariam Khoury is wife to the owner, Giannis Bitoulis, and in charge of the kitchen. Due to her origin she knows the secrets of Arabic cuisine. Trademark dishes are the famous hummus and the well-known falafel, taboule, kebbe ("meat balls" made with minced beef and groats stuffed with a mince meat and pine mixture), which you will appreciate even more when you find out that it takes 3 cooks and 3 hours to prepare 60 meat balls, souaf (souvlaki made with mutton) and kebab (lamb mince meat with herbs). The knafeh (kadaifi with cheeses and syrup) is a popular dessert.
