Frygania of Zakynthos

Frygania of Zakynthos is a traditional sweet and it is the best and sweetest way to end your meal.

20 dry toasted bread slices
240 gr. corn flower
8 glasses of milk
300 gr. sugar
cinnamon in powder
grated walnut, roasted

For the syrup
2 cinnamon sticks
6 clove sticks
4 cups of water
2 cups of sugar

For the whipped cream
4 tsp ermol
200 gr. caster sugar
200 gr. milk

Put all the ingredients for the syrup in a deep saucepan and leave them for 7 mins. In a flat fridge tray, spread the dry toasted bread slices, pour the prepared syrup on top and sprinkle a bit of cinnamon. In a bowl, put 1 glass of milk, cornflower and sugar and mix well with a wire whisk. In a saucepan put the rest of the milk and bring to the boil. Withdraw from fire and slowly add the milk with cornflower, constantly stirring with the wire whisk. Return to fire and boil for a bit more, constantly stirring. Pour the cream, hot, on top of the syrupy toasted bread slices and then put in the fridge. Prepare the whipped cream by whisking the ermol, caster sugar and milk and pour it on top of the tray with the toasted bread slices and the cream. Sprinkle with the walnuts and put it back in the fridge for at least 1-2 hrs.
