Oven-baked stuffed pancetta

Oven-baked stuffed pancetta is one of Zakynthos traditional recipes which is easy to make and ideal for a tasty Sunday lunch.

3-4 spoonfuls kefalotiri, reggato or parmesan grated
3 garlic cloves finely sliced
1 small onion finely sliced
1 tsp rosemary
1 kilo pork belly
freshly ground black pepper
1 cup (240 ml) white wine
juice from 2-3 lemons
1/2 cup (120 ml) water
1 kg potatoes, quartered

Preheat oven to 190C (374C). In a bowl mix the cheese with the garlic, onion, rosemary, salt and pepper. Put the meat on a flat surface and spread the mixture on it. Then roll the meat and tie cooking twine around it tightly. Put it in an oven tray with the wine, lemon juice and water. Lay the potatoes around it. Bake for about 2 hours.
