Rabbit Stifado

One of the most traditional recipes in Zakynthos, rabbit stifado (rabbit stew with onions) will make you want to lick your fingers.

1/2 cup olive oil
1/2 cup white wine
4 tomatoes, peeled and mashed
1 spoonful tomato puree, diluted in 1/2 cup of water
4 cloves

1/2 cup grated cheese to garnish
salt and pepper
3 cups olive oil for frying

For the marinade
2 glasses red wine or vinegar
oregano and pepper
1/2 dry white wine
2 cups of water
2 garlic cloves, peeled and grated
1 rabbit, cut in small pieces

In a big bowl put the rabbit, garlic, wine or vinegar, oregano, and pepper for 24 hrs to marinade. Fry the rabbit lightly in olive oil, after you drain it and then saute in a saucepan with the garlic from the marinade, add wine and simmer. Add water and continue to simmer until tender. Add tomatoes and herbs. When ready, sprinkle grated cheese on top.
